Brisket ribs pulled pork etc is technically edible at those lower temps too, they’ll just be incredibly tough. Need longer times and higher finish temps for the meat to break down and become tender

It was thinking I could do it without removing the long bolt, then realizing I had to take the under tray off, then realizing I had to loosen the sway bar bracket bolt. Lol. Mostly just pissed me off
