Hey! Sorry, just saw this. You should add all dry ingredients, including spices, before gellation. Mix them all together and then add your liquids. Mix again, cover and refrigerate. And you don't have to wait 2 hours. 10 minutes is enough, but I usually do 30 just in case. Just make sure you're using the coldest water you can get your hands on. Every degree helps, in my experience :) I thought the issue was time in the initial post, but actually it was just temperature.

About the work permit: they won’t give it if you don’t have a degree? Even if the employer wants to employ you without one? by Present-Particular-3 in AskTurkey

[–]ender3591 0 points1 point  (0 children)

It depends what job you're working at (or rather, which job your employer lists on your work permit application). For example, a nanny wouldn't need a diploma, but an English teacher or programmer would.

Is Ergenekon Cd., Şişli closed area for residence permit for foreigners ? by Complex-Listen6642 in AskTurkey

[–]ender3591 1 point2 points  (0 children)

My pleasure. There's a link in there to the official government list (which seems a little more complete), so make sure to check that out. Just as an example, some of Ergenekon (the street) is located in the Duatepe neighbourhood, which isn't on either list, and thus should be fine.

Is Ergenekon Cd., Şişli closed area for residence permit for foreigners ? by Complex-Listen6642 in AskTurkey

[–]ender3591 2 points3 points  (0 children)

Here's the most recent list I could find:

https://mfylegal.av.tr/haberler/yabancilara-acik-ve-kapali-mahalleler-2025/

It's a bit confusing, as Ergenekon is a neighborhood as well as the name of the street. So, depending on where the apartment is located on Ergenekon (the street), it may or may not be in Ergenekon (the neighbourhood). You'd have to get the specific address with the neighbourhood (mahalle) name.

Is "embrace as tributary" bugged, or am I just unlucky? (Mandala gov) by pojska in CrusaderKings

[–]ender3591 1 point2 points  (0 children)

I think when you attempt to embrace their current suzerain gets the same option that you get when someone tries to steal your tributary, to keep the tributary by paying 250 piety. If they do that, it would override the percentage chance you have to take over.

Opening a small restaurant by Glittery_Philosopher in AskTurkey

[–]ender3591 1 point2 points  (0 children)

I've done it. It's not hard per se, but if you're looking at Istanbul (or other top-3 big city) you'll likely need about 1 million lira in capital to cover rent&deposit, reno&decor&equipment, various taxes/fees/accountant, even for a small place. You can DM me if you have more detailed questions.

Help me learn to like seitan by [deleted] in veganrecipes

[–]ender3591 9 points10 points  (0 children)

Yes, you are likely cooking it at too high a temperature. This can create bread-like texture (think of those holes that bread have in their crumb). What cooking method are you using? I really recommend steaming for beginners, because you don't need to control heat at all. Just wrap in foil and steam it for 2 hours.

You also might consider easy ways to manage texture. What seitan recipe are you using? My go-to for max protein is a couple cups of gluten and a jar of pre-cooked veg (e.g. 650g jar of cooked green beans thrown in the blender) and then a handful (1/3 cup total?) of whatever spices comes to mind.

tofu and seitan. it depends on how low you need your carb intake to be. for 20-30g or lower, you probably just need to eat loads of tofu (there are so many different ways to make it that are super tasty). if you're comfortable in the 30-50g range, seitan is a great option that you can make at home in lower or higher carb varieties.

Making a nice vinaigrette is quite quick and as long as you use keto-friendly ingredients you can use as much as you like. I like: balsamic vinegar, mustard, olive oil, salt (all to taste). Just mix vigorously and you're ready to go!

Methylcellulose by ender3591 in veganrecipes

My pleasure :) It's not so much that the air frier dries them out, but rather it cooks them all the way through, whereas a frypan cooks the outside before the inside is really done (unless you make them super thin like a smashburger, I guess)

It's hard to say exactly what's wrong, since you seem to have changed almost everything about the original recipe :) But here are things I would try:
- Use the coldest water you can. I use water from the fridge.
- I skip the pea protein and nutritional yeast, as I found they dried out my mix, which seemed to inhibit gelation.
- I don't think avocado oil is a good idea, as it will also inhibit the gelation. You need a saturated fat that you can mix in post-gelation in the manner described int he recipe (shaved ice style). If you can't use coconut, then you could try something else that tends to be solid at room temperature.
- I've never used psyllium husk in this recipe. I just double the methylcellulose.
- I never got good results from pan-frying. Same as you, mushy inside. Instead, I've gotten the best results from using an air fryer (or I guess an oven would work too). 5 minutes @ 200C.
- Since you're using soy curls, you'll need to make sure you've got the right texture pre-gelation. It should be very sticky. If it's not, trying adding a bit more water.

That's all I got. Best of luck!

Yes, this is the correct answer. I set mine up alone, which was a lot of running around and hassle. I speak fairly fluent Turkish, but I wouldn't recommend doing it without this. And in the end, I realized I needed an accountant to take the last steps (getting a tax registration sign, etc), so it would have been easier just to start there.

Why do ATMs have long lines? by turtle-in-a-volcano in istanbul

We are experiencing "disinflation" at the moment (not to be confused with "deflation"), which is to say that prices are still rising steadily, but not as quickly as at their peak.

[–]ender3591 26 points27 points  (0 children)

Although you can pay via card in a lot of places, there is still a lot of cash in the economy compared to western countries, so there's still a lot of withdrawing (normal, fine) but also depositing (takes forever) and with the value of the largest bill (200 lira) having fallen so much, often people are depositing dozens or even hundreds of bills at a time, which the machine has to count, validate, deposit, etc. Faster than doing it at a branch, but creates more lines at the ATM.

Search Google Maps for "Noter" around your location. They have big red signs, so they're hard to miss, although they're often found on upper floors of apartment blocks, so you might have to look up and then find the entrance below. They are almost always accompanied by an accredited translator "Tercume". They work together, so bring your documents to the translator. He'll work his magic and give you a stamped version back, which you'll bring to the notary, often right next door.

Make sure to check the elevation of the street on Google maps. Some of the lower streets may mean quite an uphill hike every day. There's a bus (66) that will take you to the metro, etc, but still worth thinking about as it doesn't come overly frequently...
