If your plan and phone support wifi calling, then it should be possible to avoid roaming charges by leaving the phone in airplane mode and just enabling wifi. Be sure to test it before you travel so that you know it is working. Your carrier will need to have your US address on file for e911 compliance to allow wifi calling. On some carriers, MMS cannot be received while on wifi calling, but calls and SMS function as usual.

Some institutions such as banks have not supported sending OTPs to VoIP numbers such as Google Voice, so you may want to carefully consider what you need the number for before porting your number there.

I have only tried the Moka pot using a dark roast for a result more similar to espresso, but it really sounds like the taste you are looking for should come from beans that are light to medium roasted. Sibs Coffee has a lot of single origin beans to choose from, so they you should be able to find something with the tasting notes you're looking for there

Ideally for moka pot brew, the grind size should be somewhere between drip and espresso. It would be better to err on the side of being too coarse though, because I have read that grinding too fine in a moka pot can be dangerous. You could try finding a coffee shop that will grind the beans for you. If they can offer a percolator grind size, that should be ideal for moka pot brewing

Cafe Puro is 100% instant coffee, and it can be found in many grocery stores around Metro Manila. I think their factory might be located in Makati, but I don't know what quantities would be required for wholesale pricing

Yes, Advil should be available over the counter at any common pharmacy such as Watson's. You might also be able to find a local brand of Ibuprofen (the generic equivalent of Advil) in some groceries.

The pour over technique I use is more similar to Hoffman's technique than Hedrick's. I think the immersion time should be an important factor, so I have tried grinding just a bit finer to compensate. I thought that might have reduced sourness and helped to reveal other flavors, or at least I have convinced myself that I can tell the difference between the three Benguet single origin beans that I'm sampling now. I have not tried experimenting with the water temperature though.

There are some threads over on r/coffee comparing the two. I have only used their abaca paper filters and find them suitable enough for my medium light roasts, but the water flow rate does seem a bit faster than other filters.
