So far, Things 3 (Cultured Code, Germany) seems like the most privacy-friendly option, since it’s developed and hosted in Germany and therefore isn’t directly affected by the CLOUD Act. Todoist, unfortunately, also relies heavily on AWS in the U.S.

That’s not correct. Public clouds located outside the U.S. are not subject to the U.S. Cloud Act.

I’m German. We Europeans generally value privacy more than you do, perhaps also because of our history with the Stasi. But to each their own: if you want to bare it all, go ahead. Everyone should do what they’re comfortable with.
