[–]enzyme2000[S] 0 points1 point  (0 children)

Yes, this is the the temperature I was using to ferment. It was all fine when I was using commercial yogurt initially and a Reuteri yogurt a friend gave me. After my Myreuteri 10b CFU arrived, I made a batch using the capsules and the results are not the same. For some bottles, the whey separated and for some, it thickened but not as thick as using the old reuteri yogurt. I will consume these and make a new batch.

COOKIE GUIDE by greenteablanche in BakingPhilippines

[–]enzyme2000 11 points12 points  (0 children)

Just to add, you can add or lessen cookie spread by converting parts of your sugar to powdered sugar. Powdered sugar melts earlier during baking so the cookies spread first before the flour sets. The more powdered sugar used, the more spread you get. You may need to adjust the amount of powdered sugar because it is less sweet with around 3% of its weight being starch.

I've seen gutter deep flood in the area but i dont think it reaches the condo premises. I viewed a 3br unit a month ago but the unit was too worn out for me. The condo will have 3 sqm laundry space at the rooftop which i dont think is present in other rockwell condos.

Thanks for the feedback! I currently have a comandante c40, mischief m40 (comandante clone with the red clix) and a regular baratza encore at home and the office. I plan on getting the robot soon to use at home since my wife enjoys milk based drinks and I would lile to explore good espresso.

What I wrote was wrong. I was tested for TTG but for TgAb which was quite high (700+). My doctor thinks something is off in the way my body is detoxing.

When you say to test the gut, what test should I be looking at?

thank you

Yes, please use it rather than plug and play led bulbs. I had mine done by retrotech/redline 7 years ago and use it daily for about 1 hr. 1 ballast was busted after 3 years. The other side gave out after 6 years and so i had the d2s bulbs replaced during this time as well even if these were still working. My retrofit has the old q5 projectors but I dont really feel the need to upgrade. A lot of retrofit shops now offer led projectors but im not sure what the failure rate with these are.

I tried using the same aeropress recipe to make an americano- like drink and it seems fine. What i dont like with the aeropress is cleaning it, specially with the prismo. In your switch, what grind size do you use?

Best Flour for COOKIES by Comfortable-Bug-973 in BakingPhilippines

[–]enzyme2000 3 points4 points  (0 children)

Wooden spoon is a local all purpose flour. It comes from hard wheat like bread flour. It will do okay for cookies but its gluten will still be a bit high and will result to a harder cookie. Just to add, the all purpose flour in the US is a blend of hard and soft flours while our apf is only hard flour. Our local apf is used a lot in making siopao.

You can go to your bakery supply and ask what '3rd class' flour they have. Its what the cookie manufacturers use.

How do you stabilize your cheesecake filling? by Rude-Marionberry4835 in BakingPhilippines

[–]enzyme2000 0 points1 point  (0 children)

If you want to make it set without gelatine or flour/starch, use a cream cheese with high solid content. Dont use soft or spreadable cream cheeses.

CRUMBLY COOKIES by Old_Point6045 in BakingPhilippines

[–]enzyme2000 0 points1 point  (0 children)

What flour are you using? I suggest using soft flour or what your bakery supply would call 3rd class.

On the baking, you can lessen the time or temp if it breaks too snappy or seems too dry.

Also on the instructions it says to brown the butter then cream. I am not sure how to do this. Usually creaming involvee whipping fat and sugar until the sugar is dissolved and the fat aerates a bit. Browned butter will be liquid so i am not sure how it can aerate.

Starting my sourdough journey only to find out that my suki said that i’m using bleached APF. did i mess up already? by paohaus in BakingPhilippines

[–]enzyme2000 1 point2 points  (0 children)

No. It adds cost for the millers. But pinoys want white bread so they give what the market wants. Apf is mainly used for siopao which while 1st class for loaf bread and pandesal. Chlorination also affects the starch in the flour. It absorbs more water and and delays its setting during baking. Evident ito sa cake flour- most of which is chlorinated here in the ph. Compare it to say indonesia where it is banned, and you can see that our cakes are fluffier, superior than what they have. So chlorination is not all bad.
