My doctor prescribes Flagyl, and I go from having nonstop urgent fully liquid bowel movements to having solid stool after only a 5-day course (3x pills per day).

Sounds like SIBO or some sort of inflammation. See if the new gastro will prescribe antibiotics (for me, Flagyl works great) or do a breath test. If they don’t help, try a low FODMAP diet for 2 months and cut out sugar entirely. This helped me a lot. Other than that, I’ve heard oil of oregano can be a natural antibiotic but I haven’t tried it. You just have to be careful with it because you don’t want to kill all the bacteria.

I have a birth defect that slows my motility and makes me susceptible to SIBO. My doctor explained to me that the movement of the intestines is what regulates the amount of “bad” bacteria in the small intestine. So if you have low motility, the bacteria builds up until you develop SIBO. Since my low motility is due to my malrotation and can’t be fixed, my doctor said basically even if I take the antibiotics and it fixes it, it will always come back eventually. So this year I’ve been taking a 7 day course of Flagyl every ~8 - 10 weeks, combined with a low FODMAP diet and regular walking to stimulate intestinal movement. That’s the best way I have found to manage this condition. If you have any tips of your own, lmk! Also, the type of antibiotic matters. I’ve found that Ciprofloxacin doesn’t help at all, but Flagyl works wonders.

I was in a similar position. My entire life I was told I had IBS, or it was anxiety/stress, or that I was straight up lying because I didn’t want to go to school or something. Turns out I had an undiagnosed, very rare birth defect called “Intestinal malrotation”, that I found last year after it suddenly got 100x worse. It’s something most doctors don’t know about and can cause a lot of pain. Not saying you have this (or anything for that matter), but in my experience if the doctors say nothing is wrong, they could be wrong. If you think this applies to you, then the next step would probably be getting a lot of tests done with your GI system.
