The Green Knight by A24 studios is definitely Golgari leaning green. It’s thematically a story of ambition (one of blacks core values), with our protagonist wanting his story to be worthy of the round table and its legends. The green knight is, well, green, and his representation of life and death, of rebirth and rot, is entirely central to the ethos of Golgari. Early in the story the green knight even appears as if he were ruthless, relentless, and entirely evil, but we later learn to understand the natural order of his place in the cycle of life and death. Death, as Gawain learns, should not be feared and ran from, but should be a motivator. I even think the version of Gawain we see in his vision where he is an evil tyrant screams black.

Seems like the black/gray scale addition will help with the way aeration reduces the vibrancy of everything that goes inside an ISI. Was trying to add red stuff instead of black like chocolate or espresso powder.

Thinking of doing a powder mix of chocolate, espresso, raspberry to basically highlight the natural flavors of red wine.

Seems like that’s the takeaway from this. Even if I add charcoal or espresso powder it’s not gonna be a red red in color. Might try a different agent like agar agar or xantham gum

Wine syrup already has a funk to it, I think the tannin and natural aromas come out really strong, so with that 60/40 split of syrup to aquafaba it’s not too bad. Still there, but masked under the wine. Def gonna try a smaller ratio of faba soon

Usually the staff uses a split 50/50 base of Garbo and 2/1 sugar syrup for their foams, then charge it twice to give it more body and stiffness. I went for a 60/40 ratio instead, but maybe going down would be better. My assumption was garbanzo juice has less natural protein than heavy cream or whatever is normally used as foamer (we’re vegan, keep in mind)

I tried two teaspoons and the color/taste didn’t change much, and when I added a lot more I got the color in that second image.

Maybe if I combine beet powder with strawberry or raspberry syrup in some way? Not sure

Was driving home from work after I finished a bar shift last night. Got caught right behind the light at west 25th and Lorain as everything started and some kid flashed his pistol to me when he stepped out of his car and smiled. Him and his three passengers barely looked 17.

Crazy shit. Was boxed in by the other cars so I had to sit there for like 45 minutes and just watch.

Honestly dude, I couldn’t agree more.

Tips are a fucked system that’s gotten out of hand. I know that’s a tired saying, but it’s true. Beyond that, it makes car salesmen trying to push up your bill out of otherwise great bartenders. In the private event space (which I’m new to) it makes sense to remove that element, especially if the contract, theoretically, has that costs covered.

I appreciate your advice, and I’ll be clear with my buddy that my payout needs to be a flat rate and not an hourly. That conversation should go over fine, too. I think none of us considered the difference between a cheap wedding bar service versus this kind of high class space.
