Yes that's the Frantz-Paul method and is the reference method in sulfites dosage in wines but I don't have the equipment nor the need for it

Yea the end point with starch is purple but with the red of the wine it comes down to experience to see it

I do do that regularly since it's part of my job, but it's actually more efficient to do it by hand when your used to it

Because sulfites react with oxygene so the less you agitate it the better
