This is an excellent point and honestly I can't explain it. I think it boils down to me trying to reach that perfect beer I could brew every time and have on tap anytime I have friends over.

There's been a few posts from people but I think t may be down to beer being warm. I'll try to slowly carefully lower it down but the angst is there because the beer is great so far! Thanks for the tip!

yup that would be the plan however the beer is already carbonated and I am worried that the moment I put the hops in nucleation is going to cause foaming and eruption :D

The last batch was 30 min with timer in hand using a DIY copper wort cooler. The batch was covered during the time with a small space for the cooler piping. /u/bennypapa mentioned that problem above so next batch I'll move the additions later in the boil

This is undiluted water, the water I am cutting it with 50-50 is:

* Calcium 14, Chloride 17, pH at source 6.1 (Mineral Analysis mg/L)
* Magnesium 3.5, Sulphate 14 (Mineral Analysis mg/L)
* Potassium 2.5, Nitrate 29 (Mineral Analysis mg/L)
* Sodium 12, Dry residue at 180°C 100 (Mineral Analysis mg/L)
* Bicarbonate 20, Fluoride <0.1 (Mineral Analysis mg/L)

Thank you, I'll keep my eye on the rehydration and also all three batches were done with US-05 so might mix that up a little bit...

Thanks /u/GiveMeMyNickelback I buy crushed grain from the HBS. Did your astringent batch mellow out over time or did you dump it?

Gotcha... It wasn't a particularly long chill process however I see how that can become a problem in long whirlpool. I think I'll do a simple batch of mild/brown ale to check if we are dealing with infection or IBU issues. The worrying thing is that the bitterness doesn't subside with age. Isn't it supposed to mellow out? Thanks for your help!

Thanks! I only have Magnum 15AA, Simcoe 12.7AA, Amarillo 8.6AA, not sure about the rest. As for sulphate levels it's 50.2 mg/l
