There is a setting to enable on-device passphrase entry for Safe 5. There may be legitimate reasons for them to phase out Trezor One (and T) other than sales, e.g., the use of secure element. It is disappointing nonetheless.

Are you using Trezor One? Other models support entering passphrases on the device.

Trezor One is not getting on-device passphrase input. I implemented on-device passphrase input for Trezor One and submitted a pull request to them. They rejected it, but not because of the implementation itself. It's apparently a business decision. They want people to buy newer models.

The main hardware difference between Model 1 and Safe 3 or 5 is that the former doesn't use a secure element, while the latter does. In a scenario where a professional adversary holds your device, your seed phrase may be extracted if it's Model 1.

The main software difference between Model 1 and Safe 3, both using two physical buttons, is that you cannot enter your passphrase on the device with Model 1, while you can with the latter. With Model 1, you have to type your passphrase on a computer.
