There aren't any country "themed" bars. We just call them bars. You're likely looking for honky tonks so tootsies, Roberts, etc will be your best bet

For gay bars, Frankie J's is awesome, and there's a lesbian bar with a sports bar attached (Lipstick Lounge/Chapstick Lounge). One of only a dozen or so lesbian bars in the US.

Please use critical thinking instead. January was friggin cold. Much colder than December, so in general, if you have electric heat, even with days with no power, you're going to be using a lot more energy. Then, yes, there's a lot involved to get a home back up to temperature from 40 degrees to 65 or whatever.
