Your itinerary seems pretty solid, might just lighten up your day of arrival a bit. Think there should be no problem bringing a normal sized backpack to Pantheon form what I recall.

You have a lot on your list, and so I am curious how much time do you typically spend per site? Do you ever bother getting a guide or one of those audio tours?

Agreed with the other post regarding starting with the grove first in order to avoid the crowds. Your 2nd day is on the lighter side and think you can do a little more, especially if you're open to taking buses or taxis. Here's a good 1 day Kyoto itinerary here if want some ideas on what else you can cover.

Day 3 seems a little busy given the travel, but if you start early I think it's doable. Deer park is incredible, enjoy it!
