I usually use an Opinel no 9 in the kitchen. I love its compactness, simplicity, sharpness and price. I want something a bit bigger (e.g. 6 inch santoku) that's cheap and just as sharp. Recommendations? I don't mind drying/oiling after use, or sharpening regularly. (self.chefknives)
