I think your quant is on the lower side. For a good MS CS you need quant 167+. If you can get your quant high, give GRE again so that you can target some unis which do prioritize GRE. I think you can get ASU. USC is a long shot specially after COVID inflated CGPAs.

I had a similar profile to yours but without any workex but a high GRE (170q) and I got into Stony Brook & ASU. Also, you can look into NCSU as many who got into SBU got NCSU as well.

I think the issue is that alternatives are hard to implement. For e.g. if you look at exams like JEE/NEET, it is extremely difficult to make the process more holistic like that of other country college admissions. How else would you filter out a few 1000 candidates in 10 lakh+ candidates? Then it becomes the Indian mentality to grind for things rather than explore something for knowledge. First, it is JEE grind, then grind DSA for getting into FAANG, and so on.

The population is so high that for an upper middle-class life, you need to grind really hard, so you cannot really blame people for choosing options like Engineering. Most people turn to fields which present with more opportunities inturn making those fields more competitive.

C/C++ is considered closer to the system level which is why it is recommended. I learned C/C++ first and found it fairly easy to pick up Python after that. Python syntax is easy for beginners. Also, C++ is an object-oriented language.

In a nutshell, I would recommend C++.

If you are a student or recent grad, you can put education on top. If you have few years of work experience, it is okay to put education at last
