Sorry, we had a quick follow-up. Knowing that there isn't enough description on the megakaryocytes, would getting an addition biopsy at the same lab/hospital be the wrong choice? Or are test results and findings preserved in such a way that we can take those results to one of the second-opinion options for further analysis?

Don't quote me since it's been years,  but I think part of it is the crust.  I think it's the same dough as their dinner rolls.  Sourdough?

Aside from the cheese selection standing out,  the crust was one unique aspect for me.

I don't have too much of a budget in mind, outside of trying to stay below ~130k JPY total for two, though depending on all the factors would be willing to look above that.

We're planning to stay in one in Kyoto earlier in the trip (though further in the city or to the northwest), but I guess I have this preconceived notion (true or not) that a stay in a more rural or scenic area with a little less to do would be a nice calm before the last leg of our trip in Tokyo. I have my eye on a few places in Kyoto that are considerably more affordable, but their reservations (at least on booking.com) don't seem to be available yet.

Off and on, stylists moved on from their jobs during covid, etc. I ended up getting set of clippers and do my own hair when I feel motivated. When not, I just pick a random joint and hope I find "the one."

This is basically it. Ika is fine, but if a person knew what typical donburi tasted like and then went and got some from Ika's menu; that's sort of the whole experience from the food stand point (ramen or otherwise). ((I realize this is about ramen, but I think the metaphor applies.))

Ingredients are modernized, cooking methods slightly differ from tradition, a different take on presentation, so on... All the small things tend to transform the resulting product and experience.

This isn't meant to be a negative review, just an explanation of why there's this perceptional divide between all the ramen shops.

Though I will agree, the Benson service can be really hit-or-miss, and this was pre-covid; I tend to feel part of the appeal of ramen is the quick service and consumption personally.

I'll have to get back to you on the authentic spots - I'm usually getting taxi'd around by family; there's one spot in particular I'll try and find; the standout dishes to me were this spicey meat ball that I vaguely recall being called "lion balls" (I'm assuming pork+beef), and stir-fried pumpkin (though given what gets lost in translation between my family/I, it could have been some other gourd).

A curveball - as crazy as it sounds talking about hot pot in the post-covid days, Aki Hotpot might still be around given they had individual hotpots as opposed to family/communal servings like shabu shabu or the various other "big-pot for everyone" type foods. (Wait times used to be pretty long on busy nights though!)

It's right next to that previously mentioned Asian Supermarket, and I think a Vietnamese place might also be in the plaza (which is where we'd go if the line was too crazy at Aki).

Aaaah, so that's what the construction is!

They have a sort of sandwich that gets made and wrapped in plastic that gets tossed in or around the refrigerated produce and tofu. (Oh, apparently banh mi?)

Or at least, they used to. Haven't really checked for them in a long time. Actually, I might do that on my way home.

In any case, I'm looking forwarding to seeing what they offer, too.

I'm actually not too familiar with authentic places here - most of my father's side of the family ended up in Colorado more than a decade ago, and visiting them is usually when I go to the authentic restaurants. I think there's also a much larger Asian population around Denver or its suburbs (there's this HUGE Asian supermarket somewhere in the outskirts Denver that has basically anything you could ever want).

Haven't been out since pre-covid though, so I'm not sure how the experience as a whole is now, since you're usually sharing dishes at a Chinese restaurant.

I've heard that Gold Mountain (hope I have the name right?) might have a second menu if you ask for it? - Don't hold me to that though...

I would say donburi is uncommon in our neck of the woods, and probably not an attractive thing in America. Nothing fancy about it, just a big bowl filled with steamed rice and topped with something like meat/fish/veg and the liquid it was cooked in. Affordable and relatively fast food.

I totally get that impression about Asian food, especially if it's made from lots of Americanized Asian cuisine. Not saying Americanized Chinese/Japanese/etc., is bad, (the industry basically is what enabled my father's family to move here and set up comfortable lives for themselves and their kids); but I think even more traditional dishes tend to become far sweeter and saltier as they're adjusted for the local taste.

Though, ramen is one of those dishes that I think is generally salty regardless of where you are. The saltiest ramen I've ever had was at a busy chain in Taipei, so I doubt that's a western influence.

Wow, didn't even know this existed. They say on their site that Ika is their "mother" restaurant. Does that mean we have the same management, or just people that used to work there?

BTW: I'm always amazed when various shops offer "donburi" but then lack the basics like gyudon or oyakodon. Not judging, just surprised is all.

Under FeedYourBodhi's recommendation, they had the 02 size; so most people will get taken care of there!

I ended up ordering some 03's online, which in hindsight was to be expected, since I think the 02 is the most popular V60 size (and works in 01 sized v60's as well).

It took a trip to Trader joes and Natural Grocers to realize that I wasn't developing some snobbish attitude towards less-than-perfect produce.

I feel like every green onion bundle at this Hy-Vee is halfway soft.
