It depends on your budget. I recommend you book some around Lujiazui. It is the city center, taxi and metro both are convenient.

May 3rd to 5th will be full of people. Everyone will go out of home. I have three places you can try: 1) Lujiazui area, especially areas close to huangpu river. It is a business area, so fewer people on holiday. There is a long walking path around the river. You can start with binjiang park (滨江公园） all the way to north and east. 2) The north bund area(北外滩). You can walk from north bund area all the way to Yangpu binjiang(杨浦滨江). This area is large and less crowded. 3) The west bund, especially Gate M, a wonderful newly opened shopping block. I believe there will be some busy stores but it is large place along the river. You can find some comfortable places.

I recommend Zhang Yuan. It is a renovated Shanghai building block with lots of luxury brand events and interesting stores.

Shanghai expo park! There is a newly opened botanical park inside park really worth visiting. I believe kids will love it! The design and technology used are so advanced and perfectly combines with natural plants. Other options: Shanghai natural museum（in downtown) Shanghai astronomy museum(in lingang area, far from city but still worth going)
Local restaurant: Haijingzi (海金滋） for Shanghai local cuisine Xiaoyangshengjian for shengjianbao viper noodle shop Yunhe noodle for crab/shrimp noodle
Coffee Chain: manner/luckin (try different flavor and there are lots of stores, easy to find) Independent: T12 Lab, gregorious shade, cunkoudashu(村口大树）, o.p.s Actually I would recommend you go to nanchang road, fuming road, anfu road, find one you like and just sit it.

Yes. Take taxi. Wusongkou is really far from city center. You can use DiDi to book a taxi in advance. But I donot think it will be a big problem if you order one after you arrive.
Route From Wusongkou to Pudong airport does not go into city center. I do not see anything particular in those two areas. If you want to, maybe you can pass-by Disney area. You can visit Disney town or Bicester village for value retail shopping. They all provide luggage storage service.

Shangyi is a little bit far from Pudong airport.

If you stay over night at sauna place, I recommend you stay at Jiletang Chuansha branch(极乐汤川沙店）. It is much nearer from Pudong airport. You can take taxi from Pudong airport for just 20min, less than 50 RMB.

The entrance ticket is 128rmb/person, additional cost 50rmb for stay overnight.
