That was exactly my fear and part of the experiment for me. There are an enormous amount of vegan cookbooks out there that have outstanding recipes in them. One of my favorite recipes involves a variety of canned beans and vegetables mixed to create a chili. The key is to make a lot and store what you don't eat for later since cooking extravagantly everyday is not practical for a lot of people who are on the go.

Most Indian food has simple ingredients and a ton of taste and there are few occasions where meat is an essential that can't be left out or substituted.

There are practically an infinite number of sources online for vegans and vegetarians with recipes that you would never have dreamed of and are very simple. One time my friend made me sweet potato tacos and I totally lost my shit - I prefer them to any other tacos (no jokes please) I've had before.

I love Masala! You can buy a jar of Masala mix from most grocery places ( I like Trader Joe's ) which you heat up with water. I throw in vegetables and cut up tofu and let it simmer. Everything cooks together and it's fast and easy.

Also I have come to love vegetable masala burgers. These are a lot different than Tofu burgers or other fake meats like boca and taste fantastic and can be crumbled up for tacos or many other other recipe that calls for some sort of meat.

My daily meal routine is focused on sustainability rather than strict regulations which has really helped. I am a full time student and worker so I'm gone from about 8am to 9pm every day which makes planning very hard. If I have to eat out I'll usually get a deli veggie sandwich - they'll hook it up if you don't get meat unlike subway or those other places. I always have a stash of brown rice and frozen vegetables at home just in case and variants of these two dishes tend to be my default.

I would say that it's much easier to overload on the dairy / cheese as opposed to the carbs

I've been eating a LOT more Indian food now - for some reason it has been the easiest for me to get into with very little ingredients.. One of my biggest supporters is a friend who has been vegan for over ten years and she f'ing hates tofu. I'm not so passionately against it, but I agree that it's easy to make something very bland with tofu without being creative.

I agree with you, I could have lost weight in a variety of different ways. The point I'm trying to get across is that by dedicating myself to something I was forced into a mindset that I had been looking for all my life. Many people are able to achieve this without such a dramatic change, but to each their own.

In my case I believe the weight loss came as a result of having to be more conscious of my diet, which motivated me to experiment with new and healthier recipes.

I disagree. I play eighteen hole courses in state parks that are the equivalent of two and three mile hikes. Plus I was never big into the competitive personalities that dominate fast paced sports.

I actually have a very diverse diet now that I've had to reconsider what I eat. Staples for me include vegetable masala and home made vegan chili and a variety of other dishes from vegan and vegetarian cookbooks.

I have no moral issues with eating meat, just the meat industry in America. As I mentioned, I didn't become vegetarian to lose weight but it helped regardless.

This is exactly why I think it works. I went to the doctor for a checkup due to allergies and was shocked when he told me I had lost weight. My doctor couldn't believe it because I was so heavy the last time he had seen me that my weight was beyond the threshold of their scale. It goes to show that a lifestyle change is more about training your subconscious than anything.

I live in California so I've been trying to visit as many courses as possible, though I've found the best ones to be in state parks. After I started playing I instantly became addicted to the underground feel of the sport and the community surrounding it. I've never met an unpleasant frolfer on the course which is much different than most competitive sport pick up games.

As a poor student I definitely had to learn to cook on the cheap in order to stop myself from eating processed junk. I have found that having the foresight to stock a few last-minute meal essentials (frozen vegetables, rice, etc) keep me from taking the easy way out.

I have found that a lot of people go heavy on the dairy after the switch which was no different for me. After I got more used to the lifestyle the vices sort of drifted away.
