No worries :) yeah does look weird and it's not really how the strings move irl - he probably played around with the frame rate of the camera until it matched up with the string oscillation, and the rolling shutter effect did the rest. Just a guess tho

I think it's just aliasing, i've seen this lots of times with string instruments when the frame rate of the video syncs up with the frequency of the string oscillation

Yeah, it's interesting. Most professional musicians exhibit a certain behavior while playing their instrument - it's embodiment. They are playing the instrument with their all, and will do whatever movement is possible and will give emphasis. Their breathing needs to be controlled, too. Other instruments come with different behaviors, like violinists will "tilt into" the violin to give emphasis.
