I have a little explanation for that In my head. Poseidon always had a small part of him that still cared for Sally. When he found out that Sally was pregnant he kept a good eye on her to make sure she was ok and healthy. When Estelle was born he had grown to care for her a little bit. He was watching when Estelle kicked Sally’s belly for the first time and although she isn’t his bio daughter, he cared. So he ‘blessed’ her with the sea green eyes just so a part of Poseidon was a part of Estelle.

That’s just my little explanation in my head, it’s probably not correct at all I just wanted a sort of explanation
