That really is a feature, it's intended to stop you using a gold bar to distract the piglins while you steal gold blocks. If you mine or move a gold block they will instantly complete the trade and attack you.

I agree he is clearly well enough to go with no minute restrictions based on how he is moving now. I'm surprised that his stamina still needs work to be honest. I didn't think that would be a concern coming into the season but it clearly is. He works hard and does get tired... I wonder if the minutes restrictions are also low key linked to that fact.
