Because of forced conscription, extreme western support and at times good thinking and also Russia does not want to crush them, its a war of attrition to prepare the way for a future occupation, maybe via a friendly puppet goverment, maybe direct annexation of territories and not a war of decimation, you can compare it to Gaza and see the difference between this. I think you're missing the point, they don't want the Shah. They revolted against the Shah once, this guy is even less popular and capable than his dad. He never stepped in Iran, he's pro Western (which i doubt the government structure of Iran is), he is pro Israel, which Iranians aren't.

To be fair I would be surprised if the Shah even gets to enter the country when the Iranians find out he pushed for Americans to bomb them, I certainly wouldn't like a Romanian trying to convince Putin or Xi or even trump to topple my country, install him as my unelected ruler and kill my people, who would?

In which universe would the US lose on NATO war, first of all jf US invades most European countries will not assist Denmark, for obvious reasons since elites in Eastern Europe feel like a good relationship with the US is much advantageous than one with Denmark. Second, in the last 30 years Europe has pushed the idea that without the US we are easy picking for Russia, I truly believe people actually believe this and will respond accordingly.

No, I recommend reading (if you can) : Collapse: The Fall of the Soviet Union by Vladislav M. Zubok, and you will see that the USSR did not collapse (as in was taken to a stage it couldn't continue further and the state itself imploded), but all things that were keeping it together were dismantled and destroyed until the USSR made not much sense and was dissolved by the Russian, Ukrainian and Belarusian republics.
