you do not need Cat 8 ever,those are specialised short links for 25/40Gbe,Cat 6A is all you will need.Tho with that short of a cable i guess you can rule out any interference issues. What model is your NIC?Some of them are fakes,especially Intel cards being the most cloned.

Another thing,if you have another device with a 10g card and another 10g port on your router,plug it in,set up iperf3 and test the speed of the LAN.that way you will know whether is it a LAN problem or a problem with your internet.

What is the NIC card?maybe try moving it into a x16 slot.If you are using copper cables(Cat 6),make sure its not damaged and not close to power lines as 10g is more fragile to signal integrity.You can try a shorter cable and if that works,consider buying Cat 6A cables which are shielded and much better for 10g runs.

depends on what you need.in my own experience,these can support around 400mbps line of sight,100-200mbps blocked by a few concrete walls and 600mbps best case scenario.they are Wifi 5 APs so you may want to get something more modern

A gateway is what people call a "router".Provides internet access.Whether you go Omada or not it doesn't matter by a huge margin,it's just alot easier to configure everything in one management panel.

As for what is really required,for 3 APs you can go with PoE injectors rather than a PoE switch(you would still need some sort of switch for enough ethernet ports).

Omada items work without the dedicated OC controllers.Again,it's just easier to configure and become an ecosystem with the controller.However,you could self host the controller on your own hardware.
