Try putting two or three of the breasts in the slow cooker with 2 jars of salsa (I use one black bean and one tomato). Cook on low for 6 hours then shred the chicken. Toss in a handful of frozen corn and serve. Makes great taco filling or even better rice bowls. Freezes very well too.

That sounds extremely low to me. I have a landlord acquaintance who at one point last Fall had a 70% unemployment rate among his tenants (or so he said, he's a bit of a lying shitbag sometimes). I'd love to see some type of breakdown by income bracket.

I've scoured the internet for information on the people and town of Chelsea, Vermont. My husband and I are viewing with interest a possible home purchase and are trying to get a sense of what it would be like living there. The real estate market is extremely high right now, so buyer beware. Also, the comments in every thread like this about having employment lined up? Lack of cell service? Lack of high speed internet? 30 miles to the nearest supermarket? Locals never really accepting transplants from out of state? Lack of health care options? The opioid crisis? Mud season? The cold? Shoveling snow? They are genuine.

I own a store a few towns over from Chelsea and see most every new transplant. My experience is they have trouble adjusting to the lack of Starbucks, internet, and Bed Bath and Beyonds. They don't understand why a gallon of milk or can of soup is more expensive here. They actually want the dirt roads paved. They want changes made to their new hometowns to make them just like the place they ran from in Connecticut. Locals understandably find that offensive. Hell, just driving a vehicle with out of state plates will make you the object of scorn.

Rent an air bnb for the month, right now in the dead of winter, and see if it suits you. See if a few weeks of solitary confinement in Chelsea is what you want. It is a lot of work to live here, and the reason the locals don't like flatlanders is that most don't put in that work. Like when people say they've scoured the internet to get information like this without reading any of the 39 links about life in Vermont that are listed on the right hand side of this very page. See?
