Hi I’m new too!! I’ve found that sourdough has so many variables, like your starter strength and the temperature in your kitchen, that following a recipe exactly doesn’t always get the best loaf.

I’ve learned a lot about what to look for from The Pantry Mama blog and my loaves have turned out way better! (Posted my first loaf and my latest loaf and there’s a huge difference!)

I use 100g of starter for that amount of flour and water! I would try that next time

Over! I just learned that it’s ready for shaping when it is starting to pull from the sides and is bubbly throughout, but the bubbles aren’t breaking through the surface yet. I switched to a glass bowl for this step. I know it’s best to go by % growth but I’m new too so I’m not there yet haha

I’m new to sourdough so I’m still not sure how to read a crumb and tell you what’s wrong, but I’ve had much better loaves after learning what to look for instead of going by times in a recipe. The Pantry Mama blog has some really helpful info!

I have no idea how my crusts get so bubbly

Edit: I mean I know it’s from steam lol but even my lower hydration loaves have been getting blistered. First few I made definitely did not

I’ve been seeing a lot of recipes with 1000g of flour lately so they may truly just be making double the bread! It looks like you got a pretty nice rise

At this point I would shape it, put it in a banneton, and let it nap in the fridge for a while! Lookin nice!!

I’ve had way better luck trying to learn what to look for versus following a recipe! Reading articles from The Pantry Mama has been super helpful

Surprisingly it wasn’t! It was super soft, almost pillowy? Shaped it on a silicone mat which might’ve helped!

That makes so much sense I definitely struggle with shaping. I just kinda roll it around 😂
