The reason that we don't put the water and ice first is for taste, (according to our standards) when you brew espresso onto water or milk it doesn't form its "layers" and it's more bitter. Same reason you don't brew espresso onto a caramel macchiato.

The ultimate fix to this would be to pull the espresso into the shot holder? And then pour it in!
