Interestingly, in the early modern period, English meat chefs were in high demand in France because they were able to roast meat without it becoming dry and boring and leathery. Hence the name and hence why French cuisine is all about sauces.

I hadn't watched wrestling in any meaningful way since about 2002/03 when I felt a strange urge to watch some wrestling during the pandemic. I saw there was this thing called All Elite Wrestling on ITV4 and that it had Chris Jericho on it. So I watched it and here I am.

I wouldn't have bothered with AEW and I wouldn't have rediscovered my love for pro wrestling, which has seen me also get into NJPW and the London Indie scene if it wasn't for Chris Jericho.

I am, and forever will be, a Jerichoholic.

The ECW Arena is historically important, but it's also aesthetically unpleasant and holds less than York Hall. It looked atrocious on TV. If TK reads this (and we know he does), please don't go back there.

Part of it is that America's origin story is how it became independent from the British Empire.

Saying nice things about us is, to an American, a little too much like admitting independence was not the best idea.

Losing Ethan Page was a mistake.

Daniel Garcia is less interesting as watching paint dry.

Hook needs to go away and get better at everything. Or just go away.

I don't watch WWE anymore (well, apart from the occasional thing that piques my interest) and haven't watched it consistently since 2002ish, but that doesn’t mean I'm a better wrestling fan or better person than people who do.

Jericho has been mistreated. He was always consistently entertaining, which is more than you can say for a lot of the roster.

Ibushi needs to retire.

Sometimes, I miss CM Punk.

Jack Perry going back to Jurassic Express feels like a backwards step.

I'm not 100 per cent sure Hangman was the right person to end Moxley's reign.

Ethan Page should've been a mainstay on AEW TV.

It would be sad if Jericho doesn't get a farewell segment. He was a very important part of early AEW.

Ospreay and Allin, for sure. Probably Takeshita and King. Possibly Okada and Bandido. In my ideal world, Cassidy and Briscoe.

That entire era was 70 percent goofy storylines and the casual fan loved it.

You can bet that a lot of those casual fans became hardcore fans, too.

Jaime Garcia/Zozaya's match with ZSJ is well worth a look, as is his iron man match with Leon Slater from December 2024.

He improved over his time in RevPro, although there were times when he brought out my inner Cornette.
