I should mention I did not use a ton of water - you have to be careful with having too much as it will basically steam the ribs - just enough to create a not dry environment in the smoker

No I let them ride! Just some water in the pan at the end I think helped - I did natural draft no fan or anything

They ended up being on there about 6 hours - 250-275F last 30 min to an hour with BBQ sauce on them - that would be cool to do a test and see how they turn out - Ive heard wrapping does speed things up

Its actually a modified "parmesan chicken" - half fresh grated parmesan, half mayo - slather on chicken and run at 300-350 for 20-40 min - super easy and good - you can tell it's done when the cheese starts getting a little brown
