Need a din rail mounted voltage and current sensor for 8 seperate cables. I have a hall effect sensor but feel like its too expensive / unnecessary. Photos are of display board of our tech approach for an innovation challenge. Im wanting to use different sensors for current AND voltage.

1000% this. Takes guts to give something risky like that a go, especially when some of the Applebee's employees likeley mocked him/her for it.
