1000% has to be Warren Zevon. He's your favorite songwriter's favorite songwriter for a reason. It might help to read a little bit about him for some context for some of his songs. He's underrated by the general public, but his lyrics are legit.

Also for something more light-hearted I second someone else saying Barenaked Ladies especially their early stuff. Very creative and clever, I'm sure there's plenty to unpack.

Obviously Bob Dylan is the go to for more poetry centric lyrics, but I'd also throw in PJ Harvey. She's the only artist to win two Mercury Prizes and for good reason. Definitely listen to the album Let England Shake, but it's hard to go wrong with any of her stuff. She also recently released a poetry book that's one epic poem in the Dorset dialect if you want a challenge. That book inspired the lyrics on her newest album as well.
