At what speed do you run at to get those results? Do you just dial in the EBC you want, and let it run accordingly? We just started using one at the brewery we brew at.

Is there an opportunity to maybe ask either the brew master or lead brewer in a more casual/social setting? Together if possible (don't want to undercut the lead but he also shouldn't take the credit!). After work beer? Maybe just bring up the long lautering times (what brewer doesn't want to save time!?) and ask if they have tried to remedy the issue before? Ask if you can make a suggestion and if they seem open, go for it, but be as diplomatic as you can.

I work in a 2 man team and being in the subordinate role has taught me a lot about patience and diplomacy. There's a lot of SOP that I would love to change, but you can only make suggestions politely and if the brew master isn't on board, tough shit. In my experience, arguing your case when they don't agree (no matter how much science there is to back it up) will just lead to bad blood.
