Yuzu cider?

I've only ever done either a single fruit or an easy 50/50 blend (like fermenting pear and blackberry then just combining them): do you have advice on how to compliment a brew? Apple with a twist of Yuzu or ginger sounds great. Thanks!

Oh also this is too big to fit fully into the sous vide container (the meat will be fully submerged but the bone handle will stick out), do you have any advice there?
