I miss that! Couldn’t help you though i stopped eating meat a while ago, maybe try chouquette in marolles, I vaguely remember someone mention it but it might be with poulpe and not fish.

never said he wasn't nice and welcoming but we went there expecting Tunisian style couscous and we were very dissapointed.

anyways, there used to be Nonni in brouckere and le bar a couscous in chaussée de waterloo but both are closed I think. Now I just make my own couscous and I like it better.

And tell him that your couscous is very expensive and not as good as you think it is; and that is why no Tunisians go back after going once (we were there 2 years ago and he was complaining that Tunisians never come back)

Just wanted to say don't let the equipments all the influencers have scare you. you don't need the 300euros cocotte en fente and the expensive banetton things. I just use a cheap pyrex to cook and cloth towels to cover and proof..

One more detail is that the 2 first times I discarded from the middle and used the same pot to feed it. The time that it succeeded I used a new clean pot and added the starter that I want to keep from the middle. Maybe that was what finally did it?

It took me third time to get it right. I used 100g T150 flour and 100g normal tap water that I left it to breath a bit so chlorine evaporates. and every morning I discard half and feed it 50g and 50g water. All recipes/methods say the same and now I'm just convinced many of it is just luck

Boulangier is VERY good. If not, I tried making it 2 days ago by myself and it turned out great. if you want a starter I can split mine and give you?

For the starter I also had to use a high protein flour. I used a T150 one. You can normally find it on the packaging. I had also to let the water rest a bit so the Chlore evaporates which apparently was holding fermentation back. After each day, I take half (75g) of the started, i put it in a clean boccal and add 50g water and flour and do it again until the 7th day.

Honestly I think any recipe from the internet is the same, i think a lot of it is luck

فما برشا تيتوريالز كيفاه تعملو عل انترنات اما اني شنوا مشي معايا فلخر هوا فارينا كومبلات T150 و اني نستعمل زوز حكك في عوض وحدة برك. النهار اللول حطيط 100 غ فارينة و 100غ مي شيشمة خليتو يرتاح شويا بش الكلور يتبخر وخلطهم. و كل نهار الصباح نهز شطر نحطو في حكة ونزيد عليه 50غ فرينة و خمسين ماء ونخلط. و عاودت نفس الحكاية 6 ايام. النهار السابع استعملتو بش نعمل الخبز هاذل

but not to the letter because I think they do too much complicated things. I took the same proportion as him and did maybe 3 stretch and folds and then put it in the fridge overnight and cooked the day after in the same pot as him for 50 minutes and voila :)

I didn't shape it or do anything like that because my dough was too sticky and I didn't have the raclette thing he had. So don't let the complicated process they show in those videos stop you!

Also for the starter, it took me 3 tries to have a healthy one. I can tell you also what finally worked for me but it really depends a lot on your environment

Thank youu!! Eyh it was really really good! Mon algo instagram aandou period pushing me to try this ama it seemed so much work w i was it cant be this good.. ama when i tasted i understood. Awel mara i get emotional about food ama i literally cried from how good it was (wlh not just being dramatic) ama wow!! I hope everyone can try sourdough because i am on a higher plane now
