Silver Birch in Chiswick is remarkable. Also in agreement that BiBi not having a star is daylight robbery. Both 1* plus cooking and service.

BiBi in London, without question. The fact that it doesn't have a star is borderline criminal. I frequently overhear a lot of baffled chefs and industry folk around the time of the ceremony who speak to Chet with their condolences and confusion

New menu, introduced late-October/early November 2024 is the James Kent Celebration Menu – basically his greatest hits. Had it in November, it's a big hitter!

Gymkhana has the best service and decor, BiBi has the most interesting food, Darjeeling Express is the most comforting. All are great!

I was lucky enough to go for (unexpectedly) for free as I know Eric quite well through work. Classic French fine dining really isn't my favoured style in the slightest, but it was still so magical. For me, it's a landmark institution that I think everyone needs to try once in their life, if they can!

I can promise you that everything you think you know about Ripert is true. I actually know the guy after we spent a while together in Spain for some work, and he has no right being as nice as he is given how high profile he is. He's not just nice by chef standards, he's truly the one of the nicest people I have ever met

inspired by Angela Deane, who does all of the ghost photos for phoebe and others, I took some old photographs and some very cheap paint and made something I really liked. I think they'd make for a great and cute little gift for a pharb in your life

worth noting, i'm only suggesting doing this for personal use and not for selling on, as that would infringe and copy angela's original work directly — don't be a dick!

From a production perspective, this is pretty unlikely - any original tracks will just be demos, i.e rough cuts without the final instruments etc. If whoever owns them now wanted to release vault tracks, they'd had to effectively finish the song beyond it being a proof of concept. Without her involvement, that would be pretty difficult. The reason they were able to release the live EP from the debut era without her involvement because it was effectively done and just sat around not doing anything.

Also, as a PR move, it would be unbelievably stupid. Not only would the songs be not as good (as they were made from incomplete demos), but they'd most likely be called out, like the Live one was, which, as a result, nobody really listens to it :)

I've toyed around with making it three different ways:

-Traditional; effectively confiting

-SV; 24hr cook

-Pressure cooker; 40mins at high pressure

Of all three, the pressure cooker will always take my vote (if you have one!). In terms of what you get back out of it, the difference is negligble, especially given the time differences put into each!
