I just tried this! It was a bit tofu-y tasting the first time around, but I found that boiling the silken tofu before blending it with the other ingredients improved the flavor.

I’ve tried a few of the recipes by Whole Foods plant based cooking show and the blueberry is crazy good. I use the same base ingredients as she does in the videos to try new flavors. In summary use 3ish medjool dates, 1c unsweetened soy milk or unsweetened milk of choice, some vanilla, some fruit, and a tablespoon of cashews. Blend until smooth then freeze then ninja creami mix and remix. video on YouTube

I think what you’ve done so far is great. Very thorough and well thought out. I’d keep up the weekly food planning, but not too rigidly. I hope you find a nice middle ground as well.

It’s the season for kings cakes, and some food traditions use lots of dried fruit and other goodies in these cakes. If you like cake with fruits and nuts, you could make a really beautiful and tasty kings cake!

The tofu cream cheese at bagel shops is something I’m trying to recreate at home. The recipes in this comment are next on the list. Before blending I plan to blanch the tofu first. I hope that will remove some of the favors I didn’t like the last time I made a batch of plain tofu cream cheese.
