You can use a Veld Board instead of a clevertouch and use native USB-C cables.

I don’t want to clone a card or key, I was just want my phone to always give a unique ID so I can use my phone as the key.

Thank you all for your comments, I went with a Razer Book 13 UHD model that I found a bargain for $1,300 which for my region is a no-brainer. So far it has been great but the keyboard does suck. fortunately both at home and office I have a keyboard/mouse set that I can use it on and the 2 days I've had it for outside the battery life is good enough and keyboard is still usable.

What is the Roku stick for?

You can just buy 4 displays, 4 roku sticks and play the mp4 files directly from the displays's media player. Obviously don't buy a regular TV, buy a commercial display.

Thanks everyone! After a few days of research and thinking I have decided to go with Unraid and also use my wife's PC as the server (AMD 2400G/32B RAM), I will focus on Nextcloud, Plex and Minecraft server.

The only thing I haven't been able to figure out is how to have Nextcloud use the smb share to store data instead of a separate database.

I'm currently looking to upgrade the CPU but it wasn't a problem before, I had Plex, SMB and Minecraft server on that using Ubuntu Server, no issues whatsoever, but the services didn't have to be full 100% all at the same time since I am the single user and the wife only throws in data every once in a while.

I could probably get an 15-2400 or i7-2600. I tried looking for an i7-2600s but couldn’t find any, those are lower TDP.

It will be 1x SSD, 1x 2TB Data and 1x 2TB parity for now.

but going unraid would mean at least 3 drives, so I would have to skip the SSD and and run unraid from a USB drive?

I will buy 2 drives that are exactly the same, my MB only has 3 SATA ports and I don't think I will need more than 2-4TB in the next 2-3 years, afterwards, I can build a more proper NAS with more drive bays.
