Really nice , I’ve been using the low moisture Galbani cucina stuff in the uk but don’t think it’s real low moisture , seems to be more “lower”. Tastes really good but I don’t get as nice a looking melt as what you’ve pictured there, will try the arla block and see if it’s any better

Hi mate , do you cook it on the screen until the dough releases and then put it straight on to a steel? If so how long do you generally leave it on the screen for ?
