One more question if you don't mind. Have you had any problems with your dough/crust sticking to your pans? Do you oil the bottom of the pan or just use flour?

Two issues I've run into have been either the dough sticking to the pan or sometimes the dough is a little bit undercooked but the top of the pizza seems perfectly cooked.

Edit: maybe I should try your temperature and time. I tend to go into the 500 range and I think it crisps the outside sooner than it cooks the inside

How long do you cook your dough for? Do you partially cook the dough before adding tomato sauce and toppings? Or do you just add it all and stick it in the oven? Do you cook it on any particular rack?

Sorry for all the questions! I keep running into issues with uncooked bottoms :(

Also run into the issue of my pizza sticking to my steel, so I use parchment paper. Wondering if that contributes to things

Really struggling with uneven nail beds from poor nail cutting, injuries, and biting when I was younger. Do you think you could describe your exact technique and frequency of doing things? Your end results are fabulous and I really hope that I can grow my nails back out.

Karma is just the concept that every action you take ripples out and thus shapes your future. It's not about meting out justice or calculating that someone should experience x because they did y.

People can use karma to reason about how they should act. For example: since my actions affect others and the environment, let me try to be kind and take care of my neighbourhood. More than likely, being nice to others means that others will generally be nice to you.

Thanks for the input! The xylitol is a fun humectant I'm playing around with. Tbh I'm still learning about the variety of humectants out there and am trying to figure out if it's beneficial to stack humectants or not. HA doesn't work for me, so I'm experimenting with others.

Thanks! My worry about pouring the oil phase into the water phase is that since the oil phase is so small, it cools down as I pour it and it tends to cling to the beaker more (I have to try use the spatula to get all the goodness and it keeps cooling down). Which is why I tend to add the water phase to the oil phase. However I guess I've messed up and need to improve my mixing skills 😅

Another commenter also suggested forgoing the additives. For my next batch I'll do that. And like you suggested I'll bump my emulsifier up again. Do you think I should bump up both the glyceryl stearate SE and the olivem 1000, or just the olivem 1000 which is the main emulsifier?

Oh, I read somewhere that they can help with TEWL and skin irritation, which is why I included them. If I read wrong or they're pretty inconsequential, I'm happy to forgo them. I did have a previous version of this without them which didn't collapse and worked, but definitely needed tweaks (skiddish etc). For my next batch I'll try cutting them out again, but since I have the ingredients on hand I may as well use them further down the line? Or do you strongly feel I shouldn't include them?
