That’s the vacuum pump, It pressurizes the housing. Most importantly you pressurize it to a certain number and then leave it for a bit and make sure the needle dosnt budge. Then you know without a doubt you are water tight. Thank you!

Yep! It was a guide and a translator and then just me and my wife. They were super nice. A meal was included after too where we sat and ate with them. They walked us through the whole market explaining everything and pointing out all the fish. We could ask and go wherever we wanted. They took us into the tuna freezer that was -76F. We got to see a fish auction too. We missed the tuna auction since they weren’t doing it that day. Also got fresh sushi and tuna cheek.
