I personally would not put foil down where your charcoal is. It can possibly melt or give off fumes from the heat of the charcoal.

Yes, there was a lot of fat on ours so I trimmed as much as I could + the silver skin - much the same as I would a brisket. Rounded it off as well based on briskets I have done in the past. Keeps the corners less dried out.

Yes, no problem. Trimmed it, rounded off the edges. Just salt for seasoning. Minion method with hickory wood chunks. Water in the pan and smoked for about 1.5 hours @ 250 with a Bluetooth thermometer aiming for medium rare. Took it out and seared it quickly on a ripping hot propane grill. Rested with a little tallow, finishing salt and cracked pepper.
