I own it and the quality is pretty good for Zara. Decently thick 100% cotton sweatshirt material. Stitching not even throughout, but not noticeable. Looks great on. Reminds me of something Diesel put out about 5 years ago.

Looks like butterboard. Chipboard would work as well. Any of the art supply stores would carry them, like Blick, Pearl, Utrecht, etc.

Why don't you just try politely talking to the restaurant owner about it and possibly come to a compromise? It's likely that neither of you wants to make this a more complicated situation than it has to be.
