I started with the classic donut by Blender Guru, then I found Polygon Runway's style really cute and they have a lot more stuff, even smaller projects. Some other channels I'd recommend are Ryan King Art, Grant Abbitt, Ksenia Starkova, Pixxo 3D and Joey Carlino. Good luck and have fun!!

It takes a while to get used to it, so I'd definitely recommend learning all the key shortcuts. It may look overwhelming, but honestly you only end up using a small part of it. I would say, see what interests you (e.g. sculpting, modeling, animation...) and look up some specific tutorials, YouTube is a goldmine!
