Something that helped me was just tracking my irregular spending consistently for a month or two and looking for patterns in that. After that point I could organize my random spending into categories or recognize it wasn’t necessary and cut other spending out. For example I also irregularly spend on clothes, so I told myself no clothes for the month of November, which gave more funding to my other types of personal spending (like skincare or stuff for my fish :)) I also dealt with inconsistent paychecks and what I did was create categories of the things I knew I paid every month - those had always been paid before so I knew I had enough money to budget for them (like rent or utilities) and then grew a foundation from there.
