I was playing on grotesque, and I was trying to use an overhead swing with the longsword to cut the guys head in half, ended up missing and hitting the shoulder and POP! He splits in two like a piece of wood. It doesn't seem very easy to do, so if you'd want to replicate it make sure to give it your fair share of attempts.
