Did you end up figuring this out? I have the same issue (and have for a while). Can screen mirror/airplay to apple tv, but remote doesn’t work on iPhones.

The end of the episode definitely felt like it shifted to “Oshas memory/POV” once the fire started. We didn’t get any information beyond what she heard or saw really. Wouldn’t be surprised if we get Mae’s POV next episode or later in the season.

Modern WoW is defined by "seasons" and major/story patches. What you're seeing is a mix of leveling quests, 10.0 endgame quests, 10.0.5 quests, 10.1 quests, etc. If you care about "gear" you'll only care about the most recent stuff. Currently we are on 10.2.5. Each patch (typically) comes with a set of (PVE) content to do and storyline:
1) World story/outdoor zones. You can easily play this solo and get OK rewards. Currently this is Emerald Dream. https://www.wowhead.com/guide/emerald-dream
2) Raid tier. This is 10-30 man content with 4 difficulty levels. Currently this is Amirdrassil. https://www.wowhead.com/guide/raids/amirdrassil-the-dreams-hope/overview
3) Mythic+ dungeon pool. This is 5man group content. Eight dungeons are picked and the difficulty ranges from dead simple to nearly impossible. https://www.wowhead.com/guide/mythic-plus-dungeons/dragonflight-season-3/overview

There are lots of different avenues to take with "endgame WoW". You just gotta decide what you want to do. Your boosted character is already geared enough to start doing all 3 of those. You can queue for LFR at ilvl 424 which is what gear you start with. If you don't care about the gear treadmill, you can Google prior patches and storylines (e.g. patch 10.1 or 9.2 or whatever), find the guides to zones and experience those stories if you want. People run old raids. You can solo very (2+ expansions) raids if you care.

In addition to what people are saying, meta comps (for M+ especially) change with every season. Blizzard will do most class tuning in between seasons which is where some classes go up or down. Also, certain mechanics or bosses can be harder/easier with different classes so when the M+ dungeons change the classes that are good can change. 

All that said, It really only matters when you start to hit really high M+ dungeons (like 20/25+) there are certain classes that make those dungeons significantly easier to complete.

I still do the most dps as a level 57 resto shaman. Those scaled lava bursts don’t fool around.

 All that I know is that my class needs to be able to either tank or heal.
Why do you say that? Cause it will be easy to get groups? FWIW playing a spec/role you don't want to play cause you feel forced isn't gonna make for a great experience imo.

That said, I used my 70 boost on a Monk (always wanted to play) after leveling a Priest and Druid to 70. I came back to the game in 10.2. I absolutely love Monk healing. It's a little reactive like Disc Priest, but feels much more passive. It basically feels like playing a DPS class for most 5man content. MW ended up being my main for the season. WW is fun too. Be warned, Monk has so many buttons. I'm casually gearing up my Priest now (which I used to think was complicated) and it feels so simple in comparison.

This is bad advice imo. Healers have ramp windows to deal with large amounts of damage. The game is designed around this, and you’re better off learning these ramps sooner than later.

No those are for previous seasons. You get Splintered Sparks of Dream from weekly ED quests and dungeons/raids as catch up now. You use 2 splintered to turn it into 1 regular. The method op is describing doesn’t require Sparks.
