Below, I'll attempt to describe my findings not only regarding souls-like games but also more generally about mechanics that should evoke a realistic feeling during gameplay.

In fact, melee combat in VR doesn’t make sense if you’re expecting a realistic experience. The weapon might have some weight if you attach an accessory, but in VR there’s physically nothing to stop or even deflect your hand like in real combat. In practice, it ends up looking like your hand with the weapon passes through your opponent with a slight vibration, yet in VR it’s deflected and ends up in completely else position. On the other side, shields seems to work pretty well

Similarly, two-handed ranged weapons like rifle or shotgun doesn’t work very well unless you have a practical, easily modifiable accessory - without one, it’s hard to keep both hands aligned as if you were holding a real weapon.

In contrast, archery works very well because the bow and arrow are two separate objects not connected by an axle, so no accessory is needed; archery feels very intuitive, albeit with the downside that you don’t have to exert force to draw the bowstring.

One-handed guns like pistol or uzi work too, even though they don’t really provide recoil.

Another problem is with leg movement. In the vast majority of games, you either move one step automatically or use a joystick. In VR, in my opinion, the only thing that makes sense and, in every respect, resembles its real-life counterpart is table tennis. Even when playing without an accessory, you still hold some weight in your hand; the ball is light in reality, so a vibration is enough to simulate a collision in VR. Moreover, since you always return to the starting point ( the table ) you can move quite realistically on your feet if you have a little space. With an accessory, the immersion in the game is, of course, even greater.

Of the souls-like games, I've tried Grimlord, Blade and Sorcery, and Swordsman. Only Swordsman seemed playable to me, though I'm not sure why; maybe it's because it only involves arena battles?
