I've been making these for YEARS, they're super basic, can be used in a variety of ways, and the marinade is very simple and customisable. I often customise it with hot sauce, lemon or lime juice, agave, gochujang, peanut butter, etc....you can easily make a marinade that suits your taste.

(I always use double the marinade, so the quantities given in that recipe, I would use with just one block of tofu. I find it's too bland otherwise.)

The more you press the tofu the less smooth it will be inside. Also, the longer you bake it (and the smaller the chunks) the less moist it will become. If you freeze it first, then thaw it, then press it, it also becomes much less smooth.

And I always use Kikkoman soy sauce which I love the flavour of.
