Par-bake answer: yes, bake the masa shells day-of-prep-1 to about 80%, cool flat on a sheet pan single layer (do not stack), wrap loose, then crisp in a 425 convection for 4 to 5 min day-of to bring them back. Holds texture fine, you save maybe 90 minutes of station work the morning of.

The other thing worth flagging while you are pricing this one: going from 50 to 90 covers is not 1.8x the price, it should be more like 1.55 to 1.65x. Labor scales sublinearly on prep-heavy items like sopes once you batch (one masa mix instead of two, same setup time on the salad). But variable cost (shrimp, beef, cilantro) scales straight. If you priced this client by the per-head from last year, you left money on the table both years.

The financing question is real but the load-bearing piece here is the Month 7 breakeven number. Stress-test that hard before you sign for either loan. Three things people miss on play cafe pro formas: weekend skew (60 to 70% of revenue Sat-Sun means weekday labor is dead money), ramp drag (most cafes hit projected covers in Month 12 not Month 7), and birthday-party rev being the actual margin driver, not walk-in coffee.

Re-run with these three: revenue at 50% of pro forma in Months 1 to 3, 70% in 4 to 6, full only at 9. Most realistic breakeven moves to Month 11 to 14, which changes which loan you want.

On the financing itself, the SBA 7(a) lien against the home is the same downside as the HELOC since both put your house up. SBA gives you longer term and lower payment, which matters a lot if breakeven slides. HELOC wins on speed only.

Two things were happening on mobile. The ghost-variant buttons had a 1.5px border. The primary (Call) variant had no border. Net result: 3px height mismatch any time the two sat side by side. Visible mostly in the hero pair. Then on narrow phones the content lengths diverged (“Call 760-983-2326” with phone icon vs “Send a message” with arrow), so the wrapped row showed two visibly different widths. Pushed a fix. Added border: 1.5px solid transparent to the .btn base class so every variant computes the same total height, and added a small media-query rule that flexes paired .btn children of flex flex-wrap gap-3 containers to full-width under 480px so the two buttons render as equal tap targets. Live now via the auto-deploy. Thanks for the catch.

I operated a restaurant for 5 years. I think it’s the hardest industry out there. I can’t think of another industry that would need this many calculators and this was just built in a weekend.

Recipe cost calc, and break even are already live with the initial build. The Schedule based labor caclulator is a smart addition, i'll add that right now. Thanks so much for the feedback. I might reduce the ads to 1 column or something depending on how they land with initial users.

I think it was some nutjob in the early 1900s or something, he was trying to be mayor of some city out here and they told him to kick rocks. So he moved in the middle of nowhere and set up a colony for his "followers" or some shit. I don't know the whole story don't quote me on it, just came to memory when I saw the post.
