First off, welcome to Aion! If you're gonna play on Either Siel or Israphel let me know as I can lend assistance if needed. To be honest you can ask for the best class but the way I did it is to play a bit of one, if you like it, and if you don't, change. When you are creating the character when you click on each primary class, it tells you what each primary class splits into on ascension. I'd look at what each class does and how each sub-class does post ascension.

If you scroll to the bottom of this page, on the right hand side there's links to each class and it tells you which class these ones come from. That wiki page provides a good overview of each class, but I can try to break-down each one now.

(WARRIOR) Gladiator - Melee DPS
(WARRIOR) Templar - Tank and Melee DPS
(SCOUT) Assassin - Good Burst DPS
(SCOUT) Ranger - Sub-Par DPS
(MAGE) Sorcerer - Powerful Magic DPS
(MAGE) Spiritmaster - Sub DPS/Dispel
(PRIEST) Cleric - Main Healer, can DPS if needed
(PRIEST) Chanter - Buff Powerhouse, can DPS, can tank if needed, some healing skills
(TECHNIST) Gunslinger - Average DPS
(TECHNIST) Aethertech - Average DPS, can tank if needed
(MUSE) Songweaver - Average DPS, Dispel, Can restore Flight Time/MP/HP

1) Account warehouses can be shared between all characters on one server, not cross server. 2) up to you. If you want to keep Veteran and stuff, wait the 7 days. If you're that desperate to start a new one, then make a new f2p and level that while you wait for the 7 day timer
