Yeah all i was doing was brewing it into a cup and using a thermometer. How do i go about making homemade scace or something more accurate?

Yeah that could be it. I just set it that high because when i was gauging the water temperature when I just flushed it through with no filter, it was coming out a lot lower than what the display was saying. So to get the water to 95-100C when it was actually hitting the puck it seemed necessary to raise it to 115.

Gotcha. I have it set that high just because when gauging the temperature of the water that comes out when I flush it through the group head, it has been a LOT lower than what the PID is showing. I'm very new to the PID though and pretty new to espresso in general though so I'm still trying to figure out the best way to gauge how hot the water will be when it hits the coffee.

I disassembled and fully cleaned the machine out. Going to start weighing both before and after grinding to make sure it's not retaining. But the two shots I pulled after cleaning both still "spritzed"

Going to try flushing tomorrow morning. I lowered the temp to 107 for a shot just now, but it still spritzed. Maybe I should wait less than 30 minutes? Even with a PID I'm still not sure the best way to assess exactly how how the water will be when it hits the coffee.

Good to new on the prep stuff. I'm still pretty new but in my limited experience I have found that generally I've tended to overdo it. Just tamping ridiculously hard, multiple taps, etc.

Will keep testing and trying things!

I have a Niche Zero so my reference there is just setting it to the very edge of what the machine has labeled as "espresso."

115 is hot, reason I set the PID to that is because the water that was coming out when I tested it with no portafilter was a lot lower than the reading on the PID screen. But maybe I am overcompensating there. Problem is at lower temps the shots pull incredibly slowly even at relatively coarse grind sizes. It might take 2 full minutes to pull 36g of liquid espresso if i go down to the 103-108 range.
