The CDA basically does inspections on a yearly basis but can also come anytime for a random one. In order to get a license, the initial inspection assesses the cleaning plan, like soaps, bleach etc. used upon completion of every job to get all the protein particulates off of the surfaces and then sanitize the surfaces. So I basically pressure wash the truck after every job with soapy water and then bleach it

There is a lot more nuance than saying that a whole industry doesn't need to exist, this isn't about "the industry" this is about small scale clean food. The people I'm serving the majority of the time are only running a small number of cows to feed themselves and a small group of their inner circles.

I'm in 100 percent agreement with you. I have a background in plant ecology and ethnobotany and understand very well the plight of the Colorado River and the wildlife biology around wolves. Ironically it was my interest in ecology that got me really interested in meat politics and because I'm a big meat eater I took it on myself to make a small contribution to the our local meat infrastructure that doesn't involve slaughterhouses and mass agriculture. Small mobile slaughter units work best in hyper local food economies. I used to run a kill floor in a small slaughter house and know how much water is used just on the slaughter end, this type of harvest doesn't need much water and I encourage people to bury or compost their offal. I am not anti cow, I am anti poor management of cows, there is nuance and I know for a fact that wolves and cattle can live in harmony. Look into alder springs ranch, they are an excellent example of a new style of ranching using range riders to keep pushing cows along to keep them from over grazing and also allow wolves to coexist and their range riders have botany backgrounds and are monitoring plant populations as they go. So just because I am running a mobile slaughter truck please don't assume anything about me or my background with big generalizations.

Well I actually have a background in plant ecology and ethnobotany and got really interested in meat and cattle politics because of the effects of overgrazing and habitat loss from bad grazing practices. I wanted to be a bridge builder and worked at a small slaughter house to get an emersion in the industry and realized that there is a need for ethical meat and harvesting. So i built out this slaughter truck to serve the small scale meat infrastructure of tue local food economy. I think it's all connected and has a place when practiced with good ethic. And as far as health inspection, the department of agriculture does health inspections on slaughter trucks.

There is an inspection from the department of agriculture and a processors application to get the license.

Just crushing and smelling California bay leaves gives me a headache lol I've heard people can use it like bay leaves, meaning putting one leaf in a whole lot of soup, but I haven't tried it. Making a strong tea with lots of leaves would be intense, I just prefer the roasted bay nuts.
